Hey Friends! I am off to a really slow start on this WIAW post. Why you may ask? Because not only am I off work the rest of this week (yay for vaca!) but I am still trying to get my new apartment all set up!

Long story short: I actually put this together myself! (the white shelves)
I am proud of myself because I am anything but handy. Go me.
Ok now let’s talk food?
My meals really haven’t changed much from like ever, but going to give you some of my now fall favorite’s! Some awesome food finds at Target! Un-pictured is Kodiak Cakes – who loves these? Can’t wait to try these out!
I am going to start popping my OWN popcorn. I have seen on pinterest that you can do it in a brown paper bag. Too bad I already forgot to buy those, ha. I also found lots of spices for Fall – apple pie spice, pumpkin spice, and nugmet. These 3 really make cereal, oatmeal, coffee, iced coffee, pancakes, cakes, cookies, etc. all taste that much better. That 100% you see is for TOTAL cereal. I know, it’s processed, but I like it.
I also bought almost every single kind of Mrs. Dash – can’t get enough of this stuff, either.
Since I am home from work this week, I can be a bit more creative with meals. I started off with a different version of my “oatbran” – added pumpkin! YUM! I forgot how much I love this!
In the mix: 1/3 cup oatbran, 1 tbsp chia seeds, huge spoon of crunchy PB, cinnamon, pumpkin spice, stevia, and a lot of pumpkin (didn’t measure). So-freakin-good.
Moving on…
Obsessed with my NINJA blender. I put 6 huge ice cubs in my protein shake this morning, and it blended every-single-one. My stupid Magic Bullet could barely blend 1/2 of an ice cube. Lame.
In the mix: 1 cup water, 1 cup decaf coffee, almond milk (didn’t measure), 6 ice cubs, 1 scoop sun warrior, 2 spoonfuls of cocoa powder, vanilla liquid stevia, and coffee extract. So good and so filling!
I made one successfully and followed Foodie Fiasco’s recipe to a T, except used peanut flour instead of the coconut flour. It was good! Just happy it came out looking like a cake and had some flavor other than bland baking powder. Go me again!
Ok folks, keeping this light n sweet for today. As long as I do the above: drink my protein shake first thing in the AM, eat a good oatbran-ish breakfast, spice my food up real good, and try new recipe’s, I most certainly “Fall into good habits” – kind of hard not to by doing all of these things. I am one happy chica.
And I love my apartment. Random, I know.
I have an awesome stuffed pepper’s recipe coming your way tomorrow, as well as some fun Zumba thangs. Some students have been wearing heart rate monitors – and let’s just say, you will be SHOCKED at their calorie burns!

Chocolate pumpkin is definitely my favourite of the mug cakes! I’m a big peanut flour fan too though!

“Pumpkin pie” oatmeal is one of my favorite things in the fall…looks like I’m going to have to go get me some pumpkin when I do my shopping this week!
Oh – for popcorn, I like to pop mine in a really heavy cast iron pot (with a LID!!) and some coconut oil. OMG…so good!!

Gahh I want a ninja! One day perhaps, no room in the kitchen right now! Mug cakes are great too… ever since I started to make them with coconut flour, I can’t go back to regular wheat flour!

I`m gonna have to try these mug cakes, they look interesting!! But pumpkin, yuck, not my thing at all!! Your morning smoothie looks awesome. I`m always trying to think up new creations. Today its going to be orange juice with pineapple chunks and a little juice and lots of ice. Tastes like a creamsicle!
Oh and I am awesomely handy at putting together flat pack furniture! This weeks mission is to hang my new curtain rods. I`ve only been here for 3 years, I think its time!!

I need to try that mug cake! I’m NOT handy at all.. and neither is my husband.. he duct tapes everything – no joke. However, my dad is VERY handy and comes over to do our repairs… fairly often!

Putting together furniture is the easy part it’s picking the furniture that is my dilema!
Also I have an ottoman full of shoes.
There is so much room in those things and all you need is a small one in the living room and no one knows your shoes are in there!
It’s the perfect hiding spot!
Actually my ottoman is an eiffel tower design and it works great holds 1 pair sneakers 1 pair heels 4 flip flops/sandals and 5 flats!
Yes I had my soy pumpkin spiced latte first thing Tuesday morning!
And found a pumpkin muffin recipe so I will hopefully be trying that this weekend!!!
I guess my issue is beside using whole wheat flour and almond milk and smart balance I’m not sure how to avoid using sugar.
What do you suggest? and where can I find it?

ok so for sugar, you DEFINITELY have options!! have you tried stevia? NuNatural’s liquid stevia is my FAVORITE!! I just got a rec from a Twitter follower the other day to invest in a Ninja! I need to look into this. I never really cook a lot on my own at home so maybe it’s something to wait for til I get my own place…whenever that is!

My mom has an air popper for popcorn that she got at Ocean State Job Lot. Unfortunately bagged popcorn is just too easy to resist so we never use it! Oops.

I love spices of all kinds and one of my favorite places to shop is Penzey’s Spices over on Westport Ave – just past Stew Leonard’s. My spice cupboard is bursting with all sorts of goodness – here is there website http://www.penzeys.com/ . One of the best things about Penzey’s is that if you sign up to receive their catalog, every couple of months they send you a coupon attached to the catalog for a free spice – not a sample size, a FULL size version. I have been able to try many spices that I wouldn’t even have considered before. I think my favorite spice is cumin – never thought it would be, but it add a great flavor to ground turkey and chili!
