Hey everyone! Happy Monday. I sure am happy today (no, I am not being sarcastic).

I had such an incredible weekend and have so many awesome pictures to share. So be ware, this post is picture heavy. I honestly feel some of the best blog posts can be mostly pictures, and limited words. But since I like to talk a lot, this may be hard and as I get through this post I may end up writing more than I thought I would, ha.

So this weekend I did not teach my Saturday morning Zumba class (sorry loves, missed you all!) to get a much needed weekend break and to get away to Delaware to Nick’s beach house. We also wanted to take advantage of tax-free shopping down there and get some decorative things for our apartment. Success! Mine and his wallet is much lighter after this weekend, eeek. But our apartment looks great.

I’ll just get right to the pics.

I ended up taking the train down to Delaware since Nick was in Maryland for work. I ended up double fisting with some iced coffee and some left over wine from our Friday work happy hour. Totally a weird combination but I had 3 hours to kill on train!

I got a dunkin hazelent iced coffee with WHOLE MILK and added some stevia I had in my purse with me (thank you NuNaturals, I don’t go anywhere without you!). And, I just love whole milk. Skim in coffee? ew. I also brought some extra cups in case anyone on the train wanted to share, haha. I’m so nice (no one drank any but me, in case you are wondering).

The weather was just incredible. Couldn’t have asked for more!

I LOVE huge cups of coffee, and this restaurant in Rehoboth totally had that, and that that is why I had to emphasize that in the picture. Nick and I are also obsessed with Arena’s, and we always make at least one stop there for lunch while down there. Their salads are huge and chicken cooked to perfection. The bottom left picture is also an omelette – with LOBSTER. Oh my was this good. Lobster and eggs? Sounds weird but it was delicious. Also on the way down to Delaware Friday, I woke up early to make myself something for dinner to eat on the train – and I thought to myself, YES PANCAKES, since that would sit pretty well while I was at work. PEANUT FLOUR PUMPKIN PANCAKES! I’ll post the recipe this week!

See? not hard to eat well even away from home. I ate out for every single meal since Friday. I enjoyed every second and for one second don’t think I didn’t eat “healthy”. I am sure everything that was made was cooked in way more oil and salt than I would use at home, but who cares. It’s one weekend and it’s no secret I LOVE eating out, ha.

Speaking of eating out, this restaurant gets it’s own collage. HALF FULL. I am seriously OBSESSED with this place. It is an adorable wine bar that has wine (duh), beer, and pizza’s only. I can definitely see myself spending a heck of a lot more time there in the future weekends in Del.

Thank you Half Full for being so amazing. Pizza and wine are my two favorite things.

In the midst of drinking black-out-orange-crush-drinks. Yep, hammered Saturday night. You love it.

It was a long drive back yesterday…but got back in plenty of time to spend a million dollars at the grocery store (who knew eating healthy costs so much? ha ha) and update the apartment with all the fun things we bought!

Sorry for the glare (iPhone). Lots of yogurts, almond milk, veggies in the drawers, egg whites, eggs, etc. You get it.

Fun new gadgets and bowls!! I finally got a MISTO! I am loving it so far. It is working wonderfully with some Trader Joe’s garlic olive oil. I used it tonight for dinner on the pans and happy to say, nothing stuck. I was told Saturday at the Gourmet Chef outlet store that Pam and other cooking spray’s ruin pans. The Misto totally won’t ruin them and it’s essentially the same thing (and healthier) than Pam. I’m sold and hooked already.

I finally made a cauliflower crust for part of dinner last night. I followed the lovely Laura’s recipe, so check it out here.

I am not sure what I think. I loved the pizza and eating all the yummy cheese on top (polly-o cracked pepper string cheese…YUMM) and who doesn’t love oven roasted tomato’s? BUT, the crust was kind of mushy. Maybe I used too much cauliflower? I thought I used a bit more than a cup, so I added a little more egg whites, but maybe it was too much? Nick actually said it was tasty, and I thought for sure he was going to hate it. I just need to practice cooking more so I am sure it will come out good 2nd or 3rd time, or 10th, ha ha.

I didn’t have tomato sauce, so it was the crust topped with 3 pepper jack string cheese’s, some sliced tomato’s, garlic, and italian seasoning. I also added basil on top of mine.  Definitely tasty, just can’t wait to really perfect it.

We also had chicken stir fry for dinner with lots of spices, balsamic vinegar, and Misto oil sprayed all over it. That basically speaks for itself:

Thank you Delaware, for having some awesome and unique finds for our cute lil’ apartment.

PHEW that was long. Thank you for getting through the whole thing if you did :) I knew I’d end up writing way more than I initially anticipated.

Delaware, you never fail me. Another great weekend at the beach. One last hurrah before it really gets cold!

Love all the pictures Eva! Your dining room is awesome! I love those signs! I need to be more like you I think and have a bit more fun on the weekends! I love how you balance a healthy lifestyle with a little fun! Nothing wrong with that! I have yet to try the cauliflower pizza crust but I definitely want to! I agree with you too as long as there’s cheese on top I’m sure it has to be good! Happy monday!

I love the Delaware Beach area! Hopefully will be retiring down there – but I may have to wait a few years for that ha! Shopping down there at the outlets is great too!

My most recent fav “gadget” purchase is a spice stacker http://www.spicestack.com/ . As I’ve said before in a post, I love Penzey’s Spices and have dozens of jars so this is great – I don’t have to empty my spice cabinet every time I’m looking for something now. I also can’t live without my salad spinner – I joined a CSA this summer (community supported agriculture – farm share) and it came in sooooo handy!

I’ve make the cauliflower crust before and I also noticed that it was a bit mushy – I think that just comes with the territory. The only thing I can think of, after its mostly cooked, take the pizza off the pan and put it directly on the over rack (very carefully!!) – I’m pretty sure the pan is just holding in the moisture. I think I tried that with a leftover piece in the toaster oven and it work OK – still not really crunchy at all. Good thing its really tasty! Let me know if you ever get this perfected.

Terry! I am so glad you posted about the spice stacker.. I am so heading to BB&B sometime in the next week or two to snatch one up! My cabinet is kind of a wreck w/ all the different spices. Penzey’s is that great eh? are they expensive? I always drive by it but have never stopped in. That’s now on the to-do list as well.

Ok so glad you agree on the cauliflower pizza – I thought I may have did osmething wrong. The edges were crunchy, but honestly, if I want pizza, I think I just need the real crust… but this was neat to try!

I suppose Penzey’s can be expensive if you’re like me and wanna buy everything you see ;-) Otherwise I think they are reasonable enough, especially because they usually have several different sizes to choose from and the smaller sizes are a few bucks each – and have you seen the prices of spices in Stop and Shop!?!

A recent fav http://www.penzeys.com/cgi-bin/penzeys/p-penzeysmuskegoave.html I also like this one – but its a little pricey http://www.penzeys.com/cgi-bin/penzeys/p-penzeysfoxpoint.html They are all blends though, so there is nothing wrong with going with a few good basics too!

Love your dining room. It’s adorable.. kind alike you & the boy <3 <3 You two make such a beautiful couple girl.

ohh & GUESS WHAT! I got your package. The hubs is bringing it home today. Here to find it out it didn't go to the mail office on base, it went to DHL and they weren't able to contact us to let us know it was there because they only had your number. Can't wait to open it though :) :)

I love those green bowls, they’re fun! My favorite place for home goods is Crate & Barrel. My fiance hates going there with me because I want to buy the whole store. My favorite kitchen gadget is a toss up between my vitamix and Nespresso machine. I really love my Zojirushi rice cooker too.

Those green bowls were a STEAL! 60% off and Delaware doesn’t have tax..so freakin’ awesome. OH MY GOSH I LOVE C&B…but soooo out of my budget, haha.

You also have 2 other gadgets I want with a passion – vitamix and nespresso. JEALOUS. My ninja blender works well but I just know it doesn’t compare to a vitamix…one day

i know right? I looked for lots and found Laura’s to be the “least intimidating”.. I mean, it’s not a real pizza by any means.. I think I just want to stick to real pizza either on dough or pita’s or something

That lobster omelette sounds goooood!

Sorry the crust was a little mushy. when I re-made the recipe I included the weights for that very reason. The moisture content varies so much that it’s hard to rely on cup measurements! That said, after you do it a couple of times you can tell just by feel.

Kitchen gadget I can’t live without: my Vtiamix.

I definitely figured it had to do w/ the moisture! maybe too much egg..either way, I am sorta feeling like if I want pizza, I am doing to use the real thing, ya know? I will probably make this again just because and because I have a half of cauliflower head to use before it goes bad!

Whoa are we twins?! My fridge is filled just about the same as yours and I make cauliflower pizza on the reg. Oh and I pained a “and they lived happily ever after’ wooden board for our wedding (May of this year) and it’s hanging on our wall now. Too cool!

Spent the weekend working…boo!!!

That lobster omelet looks AWESOME! We eat omelets a lot for dinner – might have to give that a shot sometime when I just happen to have some extra lobster hanging around! ;)

Your dining room looks awesome – and I just LOVE the wall hangings! So cute! I find a lot of stuff for my house (and my office!) at HomeGoods – got a great painting there for my office wall!

Always thought about going to the Dewey/Rohoboth Beach area, but never made it there. Looks like the hubs and I will have to make a trip down there!!

Looks like such a fun weekend. Its nice to change up our weekly routine every now and again. I find cauliflower pizza crust can be a total flop or really good with the way it cooks. Even if I use the same ingredients, its bizarre!

It comes out crispy and firm, but still a little moist (sorry if you hate that word) ha ha on the inside. Sometimes it comes out differently though!

You grew up there?!! no way! I love Rehoboth! Nicks parents just bought a new house in Lewes, too, right on the Canal. Can’t wait for next summer there! I bought those hanging tags from a store right on the boardwalk in Rehoboth – I cannot remember the name but it was about half day down on the same side as Summer House Restaurant..so many amazing things there! and love the no tax!

Thank you! and Isn’t the name so cute?! It’s a also a good reminder to be positive and optimistic about life, thinking of it as “half-full” instead of half-empty. I seriously cannot wait to go back to that wine bar and dig into some pizza!

Your dining room is so cute! I absolutely love it and the plaques you have on the wall :) I am obsessed with IKEA for finding home decor and I could NOT live without my food processor. I use it almost every day!

Also, I have wanted to try a cauliflower crust forever. I am finally committing to try this-it looks so good!

Love your dining room setup! SO cute! I need to decorate my new apartment more too! I haven’t tried the cauliflower crust yet but have been wanting to! It looks good!! Glad you had such a fun weekend! I also really enjoy eating out esp on the weekends!

LOVE your dining room :) Surrounding yourself with positive affirmations is a great way to keep things in your life successful ;) This weekend I enjoyed being home, cooking for my hubby and we built our new BBQ. Although I am cleansing, I attended some dinner parties and got tons of ideas for new recipes! My favorite home decor place is flea markets. The best stuff comes from random shopping or TJ Maxx Home Goods. Love and Shine CourtStar
