October already? Weekend things. FULL FAT dairy baby

Hey-a, Friends!

Another Monday. Oh how they sneak up so quickly. How was everyone’s weekend?

Mine was great – lots of time with this guy:

(Ok, so my eye make look weird. I tried the brightener tool on Pic Monkey, ha I didn’t feel like re-adjusting. Sorry. Editing of pics for the blog takes so freakin’ long).

Friday I stopped at the grocery store after work because I really was craving ice cream. And not the low-fat-sugar-free-kind…but REAL Edy’s. I also decided I am going to use more organic WHOLE milk in things so I picked that up as well. Great start to the weekend, I’d say.

Yummy dinner, cookies n cream and pumpkin ice cream, and wine – GREAT Friday night.

Dinner was sautéed shrimp in coconut oil, lots of spices, green beans, and “riced” cauliflower sautéed with more veggies, oh and of course topped with Sriracha – my favorite condiment ever.

I like, not love, the cauliflower pizza crust, but I am actually loving “cauliflower rice”, and it is so simple to make. Just pulse raw pieces of cauliflower in a food processor (I use my Ninja) and then cook on stove top with a little oil, spices, and whatever veggies you want to add. Anyone else make this?

So last week I also received a Klutch Box to review!

It is a box that is shipped out per month at a cost at whatever membership you choose. For example, if you just wanted that month’s box, it is $18. In it comes all sorts of goodies. I was given a code by Klutch so that I only had to pay for shipping to write a review on September’s box.

SPA MONTH!

So far I can’t wait to try everything.

This is a magnesium powder you add to water. I could totally use more “calm” time since I am always so wound up from work and teaching Zumba. I take a magnesium supplement and I love it. Ever since I started doing that my knees are hardly ever sore from all the Z classes. Total A+.

I really like this concept that for less than $20, you can try a variety of products and then decide for yourself what you want to buy. I have a tendency to over buy products, and I end up hating half of them. I like that I can sample things for a small price and then if I want to splurge on any specifics, I know it’s money well spent.

Thank you LINZ! I am loving both of these so much. The cacao powder is so rich and chocolate-y. Amazing in my pre-breakfast smoothie’s.

I think anything Navitas is pretty damn good, honestly.

Some amazing eats from Friday and through the weekend (when I remembered to take pics):

One of my very sweet Zumba students, Marina, treated me to lunch on Friday. She wanted to pick my brain on Zumba as she just signed up to get licensed in a few short weeks. So proud of her and very happy for her, as well!

We got sushi for lunch at a place near where we both work in Norwalk – Wild Rice. They have the best brown rice I have ever had. I ordered california and a shrimp avocado with extra extra wasabi. I almost forgot to snap a pic but Marina reminded me it would be good for the blog – Thanks, Marina!

A new restaurant, Plan B, opened up here in Stamford. I am also trying to eat more red meat and thoroughly enjoyed this BAJA BURGER – lean beef, avocado, jalapeño’s, chipotle sauce, lettuce, and tomato on a whole wheat bun. SO HUGE and so good. And I didn’t feel like it was anything “unhealthy”; it was very “Eva-Friendly” in my opinion. Local readers – you must go there and try it! I can’t wait to go back and try more of their beers on tap, too.

My amazing pumpkin over night oats that I absolutely cannot wait to eat when I get to work. I feel like I am eating a real pumpkin pie.

In the mix: 1/3 cup oatbran, 1 TBSP chia seeds, 6oz plain greek yogurt, crunchy PB, pumpkin pie spice, cinnamon, and vanilla stevia. Heaven in my mouth.

1. What is your favorite ice cream? Mine is cookies n cream.

2. Do you use whole milk? why or why not? I am all about full fat dairy these days. I still love almond milk but recently read about an ingredient in it that has been linked to cancer. Reminds me that EVERYTHING must be in moderation, I guess.

3. Any favorite spa products? What supplements do you take? I take magnesium and maca.

You found PUMPKIN ice cream! I am still searching for it over here, my son loves it as much as me and has been asking if I found it yet every week, lol.

It seems like many people have the ‘like not love’ sentiment toward cauliflower crust – I like your idea of trying it as a rice!

yeah I want to give it another go – I have been reading some other recipe’s that seem to have perfected it so I will try.. can’t hurt ..and if it sucks, whatevs.. it wasn’t anything that fancy or expensive, ha. But yes, LOVING the rice!

Glad you’re loving the cacao! Itz amazing, right?! Your dinner of sauteed shrimp in coconut oil reminds me of my dinner last night I ordered at a restaurant: coconut curry mussels! (ok so they both had coconut and seafood – hence the reminder haha) So good!! Love that pairing!!

I’m a simple kinda gal when it comes to ice cream. I do prefer soft serve fro yo, typically vanilla with lots of fun toppings. Although the mint and cookies & cream flavors at 16 Handles would surpass vanilla any day!

I’ve been thinking about trying Plan B. I hear their drinks are pretty good as well! I’m not a red meat eater but I know they have other options.

I’m going to have to give the riced cauliflower a try! I also need to try the cauliflower pizza. Apparently, I have a lot on my “to-do” list!

I am actually with you Maria – I LOVE vanilla with lots of toppings also.. I love loading it up.. the graham cracker at 16 handles is SO freakin good!

we should go to Plan B for drinks! ok so, so far we have a 16 handles and plan B..haha! they definitely have a lot of other options – shrimp, chicken, turkey, veggie burgers, etc

Okay I am completely obsessed with your blog.. seriously! You & the boy are gorgeous together, and will eventually make the most beautiful children EVER.

I love the fact that you are now eating FULL fat milk, and embracing the extra calories you need w/ your physical activity level.

I’ve never thought to use cauliflower in other meals besides the pizza crust, so thank you!!

YES I really am welcoming all of this with open arms.. some days are a bit harder but most of the time, I just don’t even think about it, and just DO IT. I hope you are doing well w/ all of that, too!

Okay first I have to tell you that my now husband proposed to me at Wild Rice which is where we had our first date!
I love that place and working in Norwalk they have a great lunch special…anyway

I’m reallly lovin tofutti cuties small ice cream sandwiches that get rid of my craving without a ton of calories but otherwise I stick to mint choclate chip.

Milk wise we already had that debate on twitter as I use coconut milk and almond milk which both contain that carcinogen..so right now I’m going to finish what I have and then read labels and pick a new milk or milk subsitute.

I do not use any supplements or anything like that. I honestly have no clue where to start with all that stuff…oh well

NICOLE SERIOUSLY?!??!?! that is so adorable! Did you have an idea? I LOVE hearing proposal stories.. you gotta tell me! and yes they do have the best lunch specials :)

I know, I’m ugh towards almond milk but I know myself, I prob will still buy it… did you know you can make your own? super easy.. I will write about that soon.

No I had no clue he was going to propose. We went their after work and actually had the same meals we did on our first date.
Then when the check came there were 2 fortune cookies.
I open one up and started munching and did not even read the fortune.
So he said read your fortune and it said “Nicole I have a surprise for you are you ready”
My first thought was how does the resturant know my name and then out came the ring and the rest is history!

I LOVE that pumpkin ice cream!! Mmmmm tasty!

my fav flavor: caramel with pralines. SOO good! Or any caramel with almonds or toffee.

YAY for fun weekends :)

And yes, doing a bunch from Zin 40–lovin’ it! Lindsay lives near me, actually (taylor). Kinda funny!

I take that magnesium supplement, too. I can really tell a difference when i do; good stuff!

And pumpkin pie spice+ oats is just amazing. You’ve got to try it out for pancakes!

I’m so glad you picked up some full fat dairy products! That is great! Yum to the pumpkin pie oats. I love the addition to pumpkin in oats! Lots more volume:)

I receive a monthly Birchbox [loveee them :D ] but have never heard of Klutch… I’ll have to check it out!!!

I tend to limit my dairy [digestive reasons] but when I do have it, I do low-fat or fat-free, they’re easier on my stomach… We are big fans of the light Silk soymilk :)

Hey Sara! I used to love taking oreos, putting them in milk and letting them get soggy, drinking the milk, and then eating the oreas with a spoon! ohhh to be a kid again!

Oh my gosh where to start! I always drink whole milk now with my coffee. I started doing it to get the extra fat, but now I just can’t go back because it tastes so much better! Obsessed with the cauliflower ricing and pumpkin ice cream–must try both immediately if not sooner! My favorite ice cream ever is the Crema Di Grom from Grom Gelato in NYC–it’s like a custardy base with dark chocolate chips and soft cookie chunks broken up in it. DIVINE! Your weekend looks awesome; glad you’re loving life mama!

Hey gorgeous girl! Oh and same here – same exact thing. Once I started with whole milk in my iced coffee, I can’t ever go back. SO MUCH BETTER. I cannot wait to see more recipe’s out of you, but no pressure, it’s not like you are busy and all ;) haha.

I am obsessed with Dairy Free Fro-Yo Strawberry Lemonade at Fro-yo-lyfe! I am literally licking my lips thinking about it! The Klutch box looks great I have been looking for a cool box to sign up for :) I enjoy trying out recipes I find online for spa products and I get a facial once a month with a mask my skin care specialist calls Black Magic by Epicuren that mask makes my face SPARKLE! No dairy for me my body can not handle it but sometimes I dream I can have Mac and CHEESE..YUM! Kraft though ;) Love and Shine CourtStar

ohhh facials are great, too. my skin sucks. But dunno If I can do that once a month ha.
