A Much Needed Break….

HEY EVERYONE!!

I am just going to get straight the point. I have been MIA. I have taken a back seat to blogging lately, and boy has it felt good (just being honest). A much needed break, as I like to call it. At the time I was planning my Master Class, I just needed more time in the day, and what was the one thing I could cut out? Blogging. I just had to give it a rest so I could focus on other things going on in my life.

It just felt good to take a break, to not take pictures of everything I ate, to spend time with Nick, and to not stress out because I didn’t get a post done. The thing I promised myself when I started blogging was that if I ever wasn’t in the mood to write a post, I wasn’t going to. That just makes for sh*tty posts, and I refuse to have a half-assed blog post. Quality is important, in my opinion. And, it’s never too late to come back! That’s what makes all of my readers and this blog world fantastic, is that they still will come read when a new post is published (or at least I am telling myself that).

This happen to anyone else in the blogging world?

So, what have I been doing?

Well for one thing, my Zumba Master Class was an incredible success. We raised $6,090 for breast cancer research. Over 130 people attended, the energy was out of this world, and I seriously had the time of my life. So many amazing people close to me came to support the event and to just see ME teach Zumba, and I just couldn’t have asked for more.

I had the pleasure of performing this Master Class Event with 2 incredible ladies: Anna and Alejandra. Thank you both so much for an amazing night!

Are we sick of me talking about Zumba yet?! Ha.

Ever since that event on 10.26, it’s pretty much been business as usual en la vida de Eva. My day job, ie, my big girl job, is super busy – which I LOVE. Accounting always keeps me on my toes, ha. No but in all seriousness, things have picked up at work and it’s hard to want to open a computer when I get home after a long day at a desk and then teaching a very intense Zumba class. You get it.

Some foods I have been making almost every weekend whenever I get the chance: PANCAKES! I cannot get enough of these baby’s, and guess what? They taste like REAL pancakes!

What’s in it? Whole Wheat Pumpkin Protein Pancakes

- 1/4 cup whole wheat flour

- 1 scoop vanilla Sun Warrior protein powder

- 1 egg or sometimes 1/2 cup egg whites

- at least 1/4-1/2 cup of pumpkin

- 1/2 teaspoon baking powder

- lots of liquid stevia

- cinnamon and pumpkin spice

Boy are these so easy…and they are like REAL pancakes, but just slightly healthier, and jam packed with protein. I love whole wheat flour. No idea why I was afraid to use it for so long. I used to make pancakes with just protein powder, but whatever blogger out there tells you they are good, BE WARE, they are lying! ha. They are like rubber. Gross. Or maybe I was just making them wrong. Who knows. Give me some real flour and then add some protein powder to get that extra protein grams. Ya heard?

Topped with a generous portion of butter, SF Maple Syrup, and sometimes Peanut Butter. Can’t wait to eat these mañana!

So hurricane Sandy totally came through Stamford CT where I live, but we were prepared. Thank you Nick:

HAHAHA – he kills me. Our door to the patio kept blowing open so he tied his kettlebell to it. I have to say, it worked. But so funny!

We were lucky, though, in that we didn’t lose power. There wasn’t much damage in my area, but so many surrounding areas were severely affected. My heart goes out to those people, and which is why I am doing ANOTHER ZUMBA MASTER CLASS to raise money for Sandy victims. More details to come, but this is taking place on December 7th, 2012.

Some other fun eats? Well, we all know I love to eat out, and do it often. The last dinner I photographed was a few weeks ago, at a very good Italian Restaurant here in Stamford: Patrizia’s. The food speaks for itself:

Food was half-eaten, sorry. But So good! The pasta melted in my mouth…mmm.

I-love-Italian-Food. Period.

I need to get crackin’ on my day here… and oh yeah, Happy Friday, Friends!

The Zumba photos are gorgeous – definitely looks like everyone enjoyed themselves! I’m glad you were able to give yourself a break from blogging. Everyone needs it from time to time and I prefer when bloggers I read take the break they need, as opposed to forcing themselves to write anyways. It makes a huge difference in the tone of their writing!

Glad you’re back! I totally agree with taking a break from blogging…as evidenced by the fact that I’ve done all of 2 posts in 2 weeks! It’s definitely the thing that falls off the plate when I have too much stuff stacked up! I’ve totally been craving pancakes lately, so I just might have to try your recipe this weekend. Only problem is that Mike is not a big fan of pumpkin. Maybe I can try using applesauce or something instead. We’ll see how they turn out! Too bad we didn’t take pics of our food at Brasitas on Wednesday…we could have done a joint WIAW post! LOL!! Hope to see you tomorrow morning! :)

I missed you on the blog but so happy you’re back and so happy you listened to what you needed and took the break you needed! I definitely go through phases where I just don’t have it in me to blog! Looks like you’ve been super busy and that master class seems like an absolute blast!

Can I just say you are gorgeous? Congrats on such a great fundraiser. I am really proud of you for realizing you needed a break and instead living life. Love it!

awww good for you for taking the break you needed! I felt that way when I realized that blogging was being too much of a chore and decided to drop off the face of the Earth on the weekends haha sometimes you just need to live your life and not write about it :)

BTW WHEREEE did you get those socks?! I’m so in love with them haha it would be perfect for my turkey trot next week!
