Hi Friends!

I know I have been MIA for quite some time. I hope everyone had a very nice holiday season and a happy new year. Is it really 2013? I feel like yesterday it was 1995 and I was in 5th grade, ha. Yes, I still feel like I am 11.

Anyway – I never realized how time it took to keep up with a Blog. I work 45-50 hours a week at my “big girl job”, teach 3 hours of Zumba a week, and that truly does not leave much time left over. This summer, I found myself neglecting Zumba routine choreography, which resulted in some unhappy Zumba classes since my playlist was barely changing. I realized real quick that I had to take a step back from blogging, and any other free time I had oustide of work went to coming up with a solid 1-2 routines each week, to keep my class on their toes. So, that’s where I have been. Either working my day job as a very exciting Accountant (ha), or outside of my teaching 3 Zumba classes per week, I have been choreographing or spending time with Nick and my friends. I do have a life, I promise, ha ha.

I also started to get frustrated with how long a blog post started to take. Editing pictures was fun at first, but now not so much. I have to re-size every picture I take, and because I use a Mac, I don’t have access to the Windows Live Writer program that all you Windows bloggers rave about. The way my pictures insert into posts is weird, and each and every single one has to be re-sized to look right on the blog. So pictures alone took what felt like hours (not really, but you get it). It became overwhelming. I also wasn’t sure what direction I wanted the blog to take, so I just needed to step back from it all. Who cares what I did this weekend? Probably no one, except for my mom who loves catching up through my blog, ha ha.

Either way, my goal for 2013 is to pop in every now and then, write some posts, and to figure out how to shorten this picture editing process. Anyone have ideas for a Mac? Please share!

I also want my blog to be a place my local Zumba students come to and read updates, see pictures of our classes, and see my crazy health antics. I am still obsessed with teaching it if you can’t tell :) I have had to drop a class, so I am down to 3 per week, which I am finding is the perfect amount. I have time to come up with new routines, and I have the energy to really push it in my classes and give the class a great work out!

Happy Monday, Friends!

*ZUMBA IN NEW CANAAN POST*

I wantd to write a quick post to give details about where my Zumba class is in New Canaan, since it can be a bit tricky to find. Now that it is dark at like 3:00, it makes it that much harder… so hopefully this post will help those of you planning to attend tonight.

So what you do is pull into the parking lot and go UNDER the building and park in the parking garage. You are turning over train tracks. If you go passed the train tracks, then you have gone too far. The building you turn into looks like this:

The entrance is also underneath the building. You will see on a glass door that says “360 Fitness”. This is where you enter.

Walk into the left and you will see the front desk person and the studio where we will Zumba right behind it.

HEY EVERYONE!!

I am just going to get straight the point. I have been MIA. I have taken a back seat to blogging lately, and boy has it felt good (just being honest). A much needed break, as I like to call it. At the time I was planning my Master Class, I just needed more time in the day, and what was the one thing I could cut out? Blogging. I just had to give it a rest so I could focus on other things going on in my life.

It just felt good to take a break, to not take pictures of everything I ate, to spend time with Nick, and to not stress out because I didn’t get a post done. The thing I promised myself when I started blogging was that if I ever wasn’t in the mood to write a post, I wasn’t going to. That just makes for sh*tty posts, and I refuse to have a half-assed blog post. Quality is important, in my opinion. And, it’s never too late to come back! That’s what makes all of my readers and this blog world fantastic, is that they still will come read when a new post is published (or at least I am telling myself that).

This happen to anyone else in the blogging world?

So, what have I been doing?

Well for one thing, my Zumba Master Class was an incredible success. We raised $6,090 for breast cancer research. Over 130 people attended, the energy was out of this world, and I seriously had the time of my life. So many amazing people close to me came to support the event and to just see ME teach Zumba, and I just couldn’t have asked for more.

I had the pleasure of performing this Master Class Event with 2 incredible ladies: Anna and Alejandra. Thank you both so much for an amazing night!

Are we sick of me talking about Zumba yet?! Ha.

Ever since that event on 10.26, it’s pretty much been business as usual en la vida de Eva. My day job, ie, my big girl job, is super busy – which I LOVE. Accounting always keeps me on my toes, ha. No but in all seriousness, things have picked up at work and it’s hard to want to open a computer when I get home after a long day at a desk and then teaching a very intense Zumba class. You get it.

Some foods I have been making almost every weekend whenever I get the chance: PANCAKES! I cannot get enough of these baby’s, and guess what? They taste like REAL pancakes!

What’s in it? Whole Wheat Pumpkin Protein Pancakes

- 1/4 cup whole wheat flour

- 1 scoop vanilla Sun Warrior protein powder

- 1 egg or sometimes 1/2 cup egg whites

- at least 1/4-1/2 cup of pumpkin

- 1/2 teaspoon baking powder

- lots of liquid stevia

- cinnamon and pumpkin spice

Boy are these so easy…and they are like REAL pancakes, but just slightly healthier, and jam packed with protein. I love whole wheat flour. No idea why I was afraid to use it for so long. I used to make pancakes with just protein powder, but whatever blogger out there tells you they are good, BE WARE, they are lying! ha. They are like rubber. Gross. Or maybe I was just making them wrong. Who knows. Give me some real flour and then add some protein powder to get that extra protein grams. Ya heard?

Topped with a generous portion of butter, SF Maple Syrup, and sometimes Peanut Butter. Can’t wait to eat these mañana!

They get so thick!

So hurricane Sandy totally came through Stamford CT where I live, but we were prepared. Thank you Nick:

HAHAHA – he kills me. Our door to the patio kept blowing open so he tied his kettlebell to it. I have to say, it worked. But so funny!

We were lucky, though, in that we didn’t lose power. There wasn’t much damage in my area, but so many surrounding areas were severely affected. My heart goes out to those people, and which is why I am doing ANOTHER ZUMBA MASTER CLASS to raise money for Sandy victims. More details to come, but this is taking place on December 7th, 2012.

Some other fun eats? Well, we all know I love to eat out, and do it often. The last dinner I photographed was a few weeks ago, at a very good Italian Restaurant here in Stamford: Patrizia’s. The food speaks for itself:

Food was half-eaten, sorry. But So good! The pasta melted in my mouth…mmm.

I-love-Italian-Food. Period.

I need to get crackin’ on my day here… and oh yeah, Happy Friday, Friends!

Am I really getting around to writing two blog posts this week? I am up early this Friday morning so I am taking advantage of some time.

As you are all probably sick of hearing, today is my ZUMBA MASTER CLASS with my good friends & other Zumba Instructors, Anna and Alejandra.

We have been working super hard on this since end of August, and it’s all for a good cause as 100% of the proceeds are going to Breast Cancer Research. We have a lot of really cool sponsors – Robek’s, Star 99.9, Propel Fitness Water, and some other local places. Thank you, Everyone! I am sure I will over load you all with pictures next week as we have a professional photographer capturing the event. I am just so excited. And so excited that I was up way too early this morning.

But hey – HAPPY FRIDAY!

Before I dive into a yummy pumpkin roll recipe, here is a sneak peak of our outfits: {you can laugh, it’s okay}

I made up the name that we are the “Zumba Breast Cancer Elves” – haha, I seriously crack myself up. The second I put on those socks I felt like an elf, or someone going to CrossFit, and I don’t do CrossFit (maybe one day).

Ok so I made something delicious last weekend I have been dying to post:

PUMPKIN ROLLS

I followed this recipe almost exactly from Fox – except the major difference was I used to Truvia Baking Blend instead of the stevia, and I forgot to use powdered sugar for the frosting. So click that link to see it.

I’ll be honest, I SUCK at presentation and these look terrible when you compare them to the photo in the recipe link. But TASTE? SO-FREAKIN-GOOD!! So, please, do me a favor, ignore the amazing photo in the recipe, and pretend mine really look as good, because I swear they taste delicious!

Mine really look so bad, haha, I almost can’t even believe I am posting pics. Whatever.

I think the second time around I’ll master the technique. Practice always helps, ya know?

Last but not least, I was on a cooking roll (ha) last Saturday morning and made finally a perfect protein pancake before I headed to Zumba:

It was so easy – about 1/2 cup egg whites, 1.5 scoops sun warrior vanilla protein, lots of cinnamon, pinch of xanathan gum, 1/2 teaspoon baking powder, and A LOT of stevia, because god knows I need some sweetness in these things.

I mixed all the ingredients together, and threw on a pan with coconut oil.

boomtown.

Perfect pre-Zumba class meal.

And see, practice makes perfect, because I have been doing “pancakes” for a few months now and they look terrible. FINALLY I get a good-looking one. I was proud (ha-ha).

Ok I am off to get ready for work and then count down the minutes to the ZUMBA BREAST CANCER MASTER CLASS!!!

Hi Friends!

This is my “hell week”, so it is nearly impossible for me to craft some good blog posts.

My big girl job as I like to call it is non-stop (which is a good thing!) and Zumba PLUS my Zumba Master Class is taking up ANY freem time I have left over.

The good news?! My master class is SOLD OUT!! We were worried we were not going to sell out all the tickets, but WE DID!

This is going to be a great event to raise money for breast cancer research. I know this is a cause very near and dear to a lot of people’s hearts.

We have a lot of great sponsers (see picture above), and lots of prizes and swag bags to give away. Stay tuned for next week’s blog posts, because I am sure I will have a lot of pictures to post :)

Hey there, friends!

Wah-wah, here I am complaining again. It is really hard for me to get blog posts done lately. My big-girl-Accounting-job is super busy lately, Zumba and my Master Class are taking up every free day I have outside of my own Z classes, and then there are the never ending weekend plans that I can’t keep up with. I know, poor me.

 I guess it just is what it is. 

My “overdue” update is just that I am busy and don’t have time to get things done around the blog. Life is good, though, and staying positive.  The best thing of the week is my parents celebrated their 40th Wedding Anniversary. How crazy is that? They have been together since my mom 14 and my dad 16, and then married when my mom was 17 and my dad 19. NUTS! But, to this day, my mom says “every year gets better and better”…awww.

Love you, mom! I promise my father exists, he just HATES pictures and refuses to take them. One day I’ll get one, I’m determined.

So, a while back I received the September Klutch Box to review. Spa Month! I have finally had a chance to get through most of it, and I LOVE this. {Klutch Box reached out to me and told me if I only paid for shipping, they would send me a box for free. All opinions here are my own, FYI.} I will touch on a few of the products I love from this box.

Let me start off with how amazing my face feels. My skin has been giving me serious issues lately. What am I 13 and going through puberty all over again? Thank you, pimples. So what do I do? I increased my intake of Apple Cider Vinegar (mixed with water, ice, lemon juice, and orange stevia) along with the mud mask that came with the Klutch Box. I also am trying to make sure I wash my face the second I come home from Zumba – I admit I am so lazy sometimes I forget. Terrible.

Verdict: I just used the mud mask tonight for the second time and I cannot believe how soft my skin is. My cousin Dawn who sees me regularly even commented this past Saturday how awesome my skin has been looking lately. I love the Anatomy Naturals Dead Sea Mud Mask . Thank you Anatomy. My skin has never felt better in just two uses. I really am not exaggerating, either. 

My first ever blog self portrait – impressed?! I will definitely be purchasing this mud mask from Anatomy Naturals. Anything to help my 13-year-old acne and wrinkles.

Oh yeah, reminds me! I have a wrinkle on my cheek from SMILING TOO MUCH. Total laugh line. It has to be from Zumba and how much I smile when I teach! 

Right now as I type this, I have had such a stressful day and week, so I tapped into the Natural Vitality Calm Magnesium Powder. For months now I have been taking a Magnesium supplement. Why? Well when I started teaching 4+ Zumba classes per week, my knees were killing me. Once I started Magnesium, I kid you not, the pain went away.

In addition to my knees no longer hurting, I had less frequent headaches (I grind my teeth at night so I get headaches often), and I have been sleeping 10x better at night. I mixed 2 teaspoons in cold water and stirred. It tastes like lemonade. I really like it. And so do my knees, ha.

Last but not least, Nick and I LOVE the Zenify drink. I need more of these!

The taste was delicious. It reminded me of Fresca! Who has has Fresca? Brings back middle school memories. Or high school when we mixed vodka with fresca, ha.

I love the idea of this Klutch Box where you can sample a huge array of products on a monthly basis for only $18. I often find myself buying products I don’t love or need and wasting money. With a sample of products, I can test them out for a fraction of the price and then make the plunge to pay the hefty price tag for the real big-girl size. I will be paying the $42 for the mud mask – no questions asked.

The membership is also very user-friendly. You can opt in and opt out whenever you want. I like that because if I am not feeling it one month, I can opt out for that month. If I like the next month, no problem, sign right back in to get it.

I am happy to report I did pay the $18 to get the October box, and I am looking forward to it. Should be here any day now :)

A few other exciting {food} things:

Courtney from Sweet Tooth Sweet Life created a chicken burger and it inspired me to do the same.  It was delicious. Who knew adding greek yogurt to the mix made lean meat much more moist? I did! I just took a pound of lean ground chicken, adding some spices, and a few tablespoons of greek yogurt and that was it. Cooked them on the stove in a generous portion of coconut oil for about 5 minutes on each side. Delicious dinner in minutes.

I also have become obsessed with Truffle Oil. It is definitely pricey but oh-so-freakin-good. I couldn’t not share how much I love this stuff. I love mushrooms so no surprise I also love the oil. This is one of those instances that the steep price tag is worth it.

I have been cooking more and more with oils lately, and not sure why I ever didn’t do this. My go-to has always been cooking spray mixed with a little oil, but now it’s ALL oil and limited cooking spray. It makes food that much more flavorful and filling. Plus there is nothing wrong with fats.

I am SPENT! That’s all.

Hey Friends! Happy Monday.

It’s been really hard for me to post a lot lately, and it seems like Monday and either Wednesday’s or Thursday’s are when you will see my little updates. My goal is 2 posts per week.

In typical Monday fashion, I will basically show ya’ll my previous week in pictures, even though my life may be pretty boring aside from Zumba. Head on over to Katie @ Healthy Diva Eats to join in on MIMM!

I had an incredible Zumba class on Saturday – thank you so much, everyone. A few students joined me in the front of the class and it was so fun – the energy was out of this world! I really cannot wait for our Breast Cancer Zumba Class Fundraiser on 10/26/12. Let’s move on to my week in pics. 

Have I told you all how much I LOVE steamed chicken and broccoli from Chinese restaurants?! This is my favorite thing to order when getting take-out. I can eat this all-the-time. I also love steamed pork dumplings. By Thursday of last week, I was beat and needed something quick and easy after teaching Zumba at LA Fitness, on top of working all day long.

Easy, healthy, and delicious. And you know what else? You can put whatever sauces on top that you want and make it taste however you want it to. Boomtown.

Surprised? nahhh. Sriracha and wasabi sauce. Might sound like a weird combo, but so good and spicy. Spicier the better, friends.

Oh what is this interesting looking wine glass? My home-made espresso martini. In it: Trippe espresso vodka by Three Olives, some hazlenut creamer, ice, and a little iced coffee. This was a perfect pre-dinner drink before Nick and I headed out Friday night. I can’t get enough espresso martini’s lately!

I can’t remember what night I made the pumpkin deliciousness above, but all this consisted of was a half a can of pumpkin (I love Libby’s brand), some peanut flour, some oat bran, and of course, liquid stevia to sweeten along with pumpkin pie spice. Reminds of a pumpkin pudding, sorta. YUM.

Ok so it’s no secret either that I love coffee. At work I made a home-made iced coffee by letting the hot coffee sit in a cup in the fridge for a few hours, poured it in my cup over ice, and then added some stevia, cinnamon, and WHOLE milk. This is a great way for me to drink more whole milk so I’ve been making this a lot.

Sunday afternoon I met up with another CT blogger – the gorgeous MARIA at PAPPA DON’T PREACH! We are literally neighbors so we met at the infamous 16 Handles for some fro-yo. She is absolutely adorable and was so nice to meet her. Maria – can’t wait to do it again and this time DINNER AND DRINKS! We promise to take more pics next time.

MMMMM I got the pumpkin spice frozen yogurt and the graham cracker, and topped it with blueberries, coconut, almonds, and more graham cracker. Obsessed.

As if more wine needed to be consumed last night on a Sunday, but it was necessary. That’s all.

Sunday Night Dinner – Honey Mustard Pork Loin

Dinner last night was so good. And so simple.

Picked up an extra lean honey mustard pork loin from Stop N Shop. Set oven to 350 degrees. Baked for about 55 minutes. That’s it.

The most delicious, tender, and moist pork I have ever eaten. Nick said to me it was “the best dinner you have ever made” – HA and it was just so simple. I guess the key was to not over cook it, and I’m happy I didn’t. I highly recommend this pork loin and will be making again.

To go along with it, I sautéed onions and some bean sprouts (random, I know) in garlic and chili sauce and steamed green beans. I just love those “steam-in-a-bag” veggies you throw in the microwave.

I’m already craving more pork as I am writing this (which is Sunday night after I just finished eating, to post for Monday morning).

I love Sunday dinners because it gives me extra time to really prepare something that may take an hour to cook in the oven. I have come to the conclusion I am a better “oven cooker” than “stove top cooker”. I burn everything on the stove top and start smoking up the apartment. When I bake meat, it always comes out good. Go figure.

This certainly makes for a Marvelous In My Monday, friends. Great weekend with friends and Nick, awesome dinners, yummy drinks, and an awesome Zumba class Saturday morning.  I needed a good weekend after a very exhausting week last week. Work is great, just busy. Being busy IS a good thing. But so is rest. I need rest.

This week will be more rest since I have cut down a Zumba class, so no more Double Zumba Tuesday’s. Sad, but again, had to be done. But wait, I’m lying, because preparing for the Breast Cancer Class with my 2 beautiful other instructors is eating up Wednesday – but it is WORTH IT!

Ok rambling.

Hey there, friends!

I have had the craziest weekend and this week in itself doesn’t stop. Can’t stop, won’t stop, ya know?

I love joining in on WIAW, but when I do it, it’s not always my meals. Last week is was Crock Pot Chicken, and this week I made Pork, and boy was it good! Loving me some Fall Crock Pot Recipe’s. Thanks to Jenn at Peas and Crayons for hosting this weekly.

First things first, I had to say goodbye to my Norwalk LA Fitness 8 pm Zumba Class. In adding in a new Monday class, that made it 5 classes per week. I just can’t do 5. 4, yes, but not 5. Since I already teach a Tuesday class at 6:30, the 8pm one made sense to drop. Plus I am really trying to build up the studios I teach on Monday’s and Tuesday’s since you do not have to be members there, and can “pay-as-you-go” kind of thing. LOCAL READERS – feel free to contact me with info regarding these classes.

Don’t worry LA, I am still teaching the Thursday class at 5:45 and also will be in Stamford on Saturday’s.

I am also eating pumpkin-oatbran-greek yogurt-peanutbutter concoctions every single morning. It is just so good and let’s be honest, we are all on pumpkin kicks lately! I have been going through about 4 cans a week, because who just eats 1/2 cup at one sitting? I can eat almost the entire can! ha.

I love how filling it is and how it overflows the bowl. Yum.

Ok now onto a recipe…

CROCK POT PORK 

I got this idea from my Italian Mama. Growing up she always made chicken or pork in a red sauce, and it was so good. Ya know, the kind of meat that would just “fall apart” as you ate it. Yep, that’s exactly how mine came out in this recipe. I was not disappointed, and happy I closely recreated what my Mama has made before.

Ingredients: 

  • 1lb thin slice pork chops
  • 1 medium onion, chopped
  • 2 large cans of crushed tomato’s (I used unsalted)
  • Lots of spices thrown in: trader joe’s 21 salute, garlic, italian seasoning, basil
  • Parmesan cheese and crushed red pepper when finished

Directions:

This is so easy – chop onion, and throw everything together in the crock pot. I did this Monday afternoon, so I set it on high for just about 4 hours. I would imagine you could do low for 8 hours, too.

Verdict: 

VERY GOOD. Nick also really liked this, and when he likes something, it means I’ve actually done a decent job because he is ridiculously picky. Like I said, the pork was so tender and just would fall apart as you ate it.

I served mine with a side salad or arugula since we all know I can’t get enough of it.

Lots of grated parmesan cheese and crushed red pepper on top.

Who is loving their crock pot lately? This household can’t get enough, and I just love how easy everything is. “Set it and forget it” – haha, I had to.

Are you tired reading it? I am exhausted

So, as I always say, this post may be short word-wise (at least that is my intention) but filled with lots of pictures. A week in pictures, as I like to call it.

Home-made popcorn made in a brown paper bag and just popping kernels. I add lots of spray olive oil from the Misto, extra garlic, and nutritional yeast. I admit, it’s not nearly as good as the packaged popcorn you buy at the grocery store, but this is a close 2nd, and it’s obviously much less processed and all that jazz. With that said, I did just buy a new box of packaged popcorn from Trader Joe’s. I like to mix it up – sometimes pre-packaged and sometimes home-made popcorn.

I had a half day on Friday so I stopped by Starbucks to get a little pick me up before heading to Zumba Master Class preparation with my favorite Z girls. I love that Starbucks carry’s oatmeal and all the fix-ins. I always add extra cinnamon, nutmeg, stevia, and nuts. I often add an extra oatmeal packet, too. Need-those-carbs.

I have been loving cauliflower rice with veggies. So easy and so tasty.

My favorite thing to make on the weekends: protein pancakes. This time it was chobani plain greek yogurt, oats, egg whites, apple pie spice , and stevia. This was an awesome pre-zumba power meal Saturday morning!

After I did my friend Anna’s Zumba class this morning, I was starving (Great class Anna!).  Finally when I got home to my apartment I made a huge omelette with 2 eggs, extra egg whites, steamed cauliflower and broccoli (love those steam-in-a-bag veggies!), polly-o string cheese, topped with basil, cilantro, ketchup, and sriracha. I am ridiculously full. Eggs rock, just sayin’.

Beautiful wedding in Long Island Saturday night. I was able to see so many people from college I had not seen in a while. So great catching up with you all and congrats Tanya and Adam! I had such a great time at the wedding and it was absolutely beautiful. Check out the Vanderbilt Museum! The bride was a real stunner and food was out of this world (sorry no pictures).

My friend Nicole’s baby shower in Massachusetts. I was in her wedding 1.5 years ago :) I bought her a piggy bank with her baby’s name engraved on it. Every kid needs a piggy bank, right?!  Another day catching up with girls I had not seen since Nik’s wedding. Hi Karen! Hi Aimee!

So crazy everyone around me is having kids. So-not-there-yet. ha. 

Last but not least… I was able to spend the night with this beautiful lady in Boston. Melissa and I had way too much fun last night for Sunday Funday. I wasn’t very C2N guys.. lots of drinks, and lots and lots of chips late night. So good at the time, but total food hangover and food baby this am. But I do love those nights as they are so-much-fun. When I lived in Boston, this girl and I ran the show, ha. Not really, but we always went out together. Until next time, my friend!

So as I am writing this, I still have a Zumba class to teach tonight and finally catch up with everything else going on. Relaxing any time soon? Nope. Simple case of “I’ll sleep when I am dead” kind of weekend/new week.

I do love being busy, though. I like having things to do because I find the more I have going on, the more I get done. Anyone else feel this way? When I have nothing to do, nothing gets done as I just sit around be lazy. Don’t get me wrong, lazy days are absolutely necessary, too. I just prefer to be busy and keep movin’. I like that accomplished feeling that I feel after a day full of events. Agree? Disagree?

The truth in the matter is that part of me wanted to say no to some of the events going on this weekend. It would have made my life a little easier. However, it is really important to me to attend such things because I have had habits in the past of saying no, and when you start saying no, people stop inviting you. When I stop getting invited I get upset, sensitive, pissed off, and ya know what? I have no one to blame but myself when that happens. So I have made a much more conscious effort to meet up with old friends and attend when I am invited, and I am a much happier individual because of it. Every girl needs her friends and girlfriends, most importantly. 

The rest of the month sure is not slowing down, either. Bring it on!
